Blueberries and blackberries might be small, but their big on health! They’re rich in nutrients, antioxidants and phytochemicals which may help prevent and even reverse the effects of aging, cardiovascular disease, diabetes, arthritis, certain types of cancer and high blood pressure. Plus they help in weight management as they’re sweet and delicious without a ton of calories or fat, making them a guilt-free treat!

These easy pancakes are an amazing way to get a serving of fruit in, and they’re so delicious even the kids will enjoy them!

Ingredients

Instructions
  1. Sift together the flour and both baking powders and set asides.
  2. Beat together the egg, water, salt, and artificial sweetener into a separate bowl.
  3. Stir in the flour until it is just moistened, and then add the fruit and stir to incorporate.
  4. Preheat a heavy-bottomed skillet or griddle over medium heat, and spray with cooking spray (I use canola spray because of the high-smoke point).
  5. Pour 1/4 of the batter onto the pan for each pancake.
  6. Cook until the edges are brown and you can see bubbles (about 2-3 minutes).
  7. Turn, and continue cooking until golden brown.
  8. Serve with fresh berries.
