Whether it’s tailgating and cheering for your favorite team with family friends or just wanting to warm up on a cold night, this healthy beef chili is great for your heart and super easy to make. Why? Because my recipe calls for the use of one of the most amazing and essential kitchen items I think every home needs…the crock pot.

The crock pot, also called a slow cooker, allows you to prep this and other recipes in the morning, leave it slowly cooking while you get on with your busy day. Then you come home to a warm, perfectly cooked, ready-to-eat meal without having to worry about cooking and with very little clean up. Sound great, right?

This healthy beef chili is full of fiber as it includes tons of vegetables like carrots, onions, and tomatoes (yes, yes I know that tomato is technically a fruit, but in the nutrition world it has more similar nutritional properties to a vegetable so we call it as such).

The healthy spices help to bring a wonderful hearty flavor to this beef chili, and the slight heat helps to boost your metabolism.

You can always add more heat if you like, but I find that the amount of chili powder I use is just enough to give it flavor without feeling like napalm on your tongue. I even heard suggestions on adding a little chopped celery to the mix, but I feel as though this turns this healthy beef chili into more of a stew instead of a chili.

Instructions
  1. Stir together chili powder, cumin, salt oregano and pepper into a small bowl.
  2. In a large nonstick skillet, heat the canola oil over medium-high heat and swirl the oil at the bottom of the pan.
  3. Cook the ground beef for 5 to 10 minutes until it is no longer pink. Stir frequently.
  4. Transfer the beef to the slow cooker.
  5. Add the tomatoes with the liquid, the onion, carrots, bell pepper, the water, tomato paste, garlic, and spice mixture.
  6. Cook covered either on low for 6 to 8 hours or on high for 4 to 5 hours.
  7. At the end of the cooking time, quickly stir in the beans and re-cover the slow cooker. Cook for an additional 30 minutes on high.
  8. Serve with the slices scallion on top. Add cheese if desired.
