Instructions
  1. Boil lentils in 4 cups water. Once soft, lower heat to low and keep warm.
  2. Heat oil in a large saucepan on medium heat. Saute the asparagus and onions for 5-10 minutes until softened but still bright green.
  3. Add spinach and garlic powder, pour in stock, and bring to a boil.
  4. Once softened, use an immersion blender to puree soup.
  5. Season generously with pepper and add a dash of salt.
  6. Ladle soup into bowls and add lentils. Garnish with fresh asparagus spears and olive oil.
