One of the things I missed most about breakfast were waffles. They’re not exactly the healthiest thing. Not with this healthy waffles recipe!
Waffles are rarely ever considered healthy. Due to the high amount of carbs, fat, and even sometimes sugar, this traditional breakfast item can leave you in a food coma.
I set out on a mission a couple of years ago to create the perfect healthy waffles recipe. I was helping my friend clean out her kitchen and she found a waffle iron hidden in the back of a cabinet. She offered it to me since she barely used it.

So with my new kitchen gadget ready to go, I needed to make a recipe that was going to be light, full of fiber, but not taste like cardboard. After several attempts, I found that this version makes the best tasting healthy waffles ever!
Funny enough, other versions I made with eggs didn’t come out quite as good as these. I found it interesting that my vegan version of these healthy waffles were a bigger hit. Plus, since I’ve used mostly applesauce and only a small amount of oil, they’re very low in fat!
These waffles are also high in fiber and very high in vitamin B6.
- 1/2 cup spelt flour
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1 tsp baking powder
- 1/16 tsp stevia
- 1 tbsp almond milk unsweetened original
- 7 tbsp applesauce unsweetened
- 2 tsp canola oil
- 1 tsp vanilla extract
- 1/2 cup blueberries
- Mix the spelt flour, salt, baking soda, baking powder and stevia in a mixing bowl and combine well.
- In a second bowl, stir together the remaining ingredients EXCEPT for the blueberries (well, you could add the blueberries if you wanted them inside the waffles, but I prefer them on top).
- Grease your waffle iron with oil.
- Preheat the iron.
- Pour your wet ingredients into the dry ingredients and combine evenly.
- Pour the ingredients into your iron.
- When the waffle is done cooking, serve with fresh blueberries. Makes 2 large or 4 medium, healthy waffles.
